High Protein Snack Box Lunch (Adult Lunchable Meal Prep)

Ingredients
  

  • 4 ounces deli turkey
  • 2 ounces sharp cheddar or aged gouda cheese
  • 2 hard-boiled eggs
  • 1/4 cup raw almonds or mixed nuts
  • 1/4 cup roasted chickpeas
  • 1 small apple or pear
  • 1/2 cup cucumber slices
  • 2 tablespoons hummus
  • 1 small handful of olives
  • 1/4 cup fresh berries
  • small packet of whole grain crackers
  • salt and pepper to taste

Instructions
 

  • Step 1: Prep your proteins ahead of time by hard-boiling eggs at the start of the week and storing in the fridge. Roast chickpeas with seasoning salt and paprika at 400 degrees for about 30 minutes until crispy.
  • Step 2: Choose a divided bento box or small glass containers to keep wet foods separate from dry foods. Pack hummus in its own container.
  • Step 3: Layer strategically by placing heavier items on the bottom (turkey, cheese, eggs), arrange lighter items around them (nuts, crackers, berries), and put produce in a separate section.
  • Step 4: Keep it cool by tossing an ice pack in your lunch bag. Keep cheese, turkey, and eggs below 40 degrees until eating.
  • Step 5: Pack salt, pepper, and lemon juice separately so you can adjust flavors right before eating.

Notes

Store assembled boxes for up to four days in the fridge. Keep cheese and proteins in the coldest part of your fridge. Pack the box the night before or morning of with ice packs. Swap turkey for rotisserie chicken, beef salami, prosciutto, or smoked salmon for variety. Crackers will soften if packed overnight with hummus. To boost protein further, replace crackers with cottage cheese, add protein granola, or include hemp seeds, pumpkin seeds, or a mozzarella stick. Pairs well with green salad, vegetable soup, whole grain bread with almond butter, or Greek yogurt smoothie.
