Equipment

  • large sheet pan
  • parchment paper or cooking spray
  • mixing spoons or hands

Ingredients

  • 2 lbs lean ground turkey (93/7) or chicken breast, cubed, or salmon fillets
  • 3 cups broccoli florets
  • 2 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup low-sodium chicken broth (optional)

Instructions

  • Step 1: Preheat your oven to 425°F. Line a large sheet pan with parchment paper or lightly spray with cooking spray.
  • Step 2: Spread your protein across the pan in a single, even layer. Arrange broccoli, zucchini, bell pepper, and onion around the protein, giving everything room to roast.
  • Step 3: Drizzle olive oil over everything. Sprinkle minced garlic, Italian seasoning, salt, and pepper across the pan. Toss everything together until vegetables are lightly coated and seasoning is distributed.
  • Step 4: Slide the pan into your 425°F oven for 20-25 minutes. Ground turkey and chicken pieces need the full 25 minutes. Salmon can be done in 20 minutes. Everything should be cooked through with caramelized vegetable edges.
  • Step 5: Pull the pan from the oven and let it sit for two minutes. Taste a bite and adjust seasoning if needed.

Notes

Don't overcrowd the pan - use two pans if needed to avoid steaming. Cut vegetables to roughly the same size for even cooking. Double or triple the recipe on Sunday for meal prep throughout the week. Pair with different sides to keep meals interesting. Each serving delivers 34g protein, keeping you satisfied and supporting muscle retention during weight loss.
