High Protein Freezer Meals (Make-Ahead Meal Prep)

Ingredients
  

  • 2 pounds ground turkey or lean ground beef
  • 1 large onion, diced
  • 3-4 cloves garlic, minced
  • 1 can crushed tomatoes or 2 cups broth
  • 2-3 cups mixed vegetables (bell peppers, zucchini, mushrooms, carrots, celery)
  • 1 can beans or lentils
  • Oil for cooking
  • Spices (cumin, paprika, chili powder, Italian seasoning as desired)
  • Salt and pepper to taste

Instructions
 

  • Step 1: Brown your protein - Heat oil in a large pot over medium-high heat. Add ground meat and cook until no pink remains, breaking it apart as it cooks, about 5-7 minutes. Drain excess fat if needed.
  • Step 2: Build your flavor base - Add diced onions and minced garlic to the pot. Cook for 2-3 minutes until softened and fragrant. Add spices and toast for 30 seconds to bloom flavors.
  • Step 3: Add your liquid - Pour in broth, crushed tomatoes, or coconut milk. Scrape up browned bits from the bottom of the pot.
  • Step 4: Stir in vegetables and simmer - Add chopped vegetables and beans or lentils. Bring to a simmer and cook for 15-20 minutes until vegetables are tender. Taste and adjust seasonings generously.
  • Step 5: Cool completely - Let cool to room temperature (about 30 minutes) before transferring to freezer containers.
  • Step 6: Portion and label - Divide into individual containers and label with dish name and date.

Notes

Cool completely before freezing to avoid raising freezer temperature. Store in quality freezer-safe containers with tight seals for up to 3 months. Season boldly before freezing as freezing mutes flavors slightly. Thaw overnight in refrigerator when possible. Reheat in microwave (2-minute intervals, 3-5 minutes thawed or 7-10 minutes frozen), on stovetop with splash of water or broth (5-8 minutes), or in slow cooker on low. Avoid soft vegetables like avocado or fresh lettuce, add fresh after reheating. Ground meat, shredded chicken, beans, and lentils freeze better than delicate fish or thin cuts of beef.
