  • 1 lb lean ground turkey (93/7 blend)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup low-sodium chicken broth
  • 3/4 cup non-fat Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh dill (or 1 teaspoon dried)
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1 cup zucchini noodles or 3/4 cup brown rice per serving
  • Fresh spinach or arugula
  • Cucumber, diced
  • Lemon wedge

Instructions
 

  • Step 1: Heat a large skillet over medium-high heat. Add ground turkey, breaking it into small pieces as it cooks for 4-5 minutes until cooked through. Add diced onion and cook for 2 minutes until softened.
  • Step 2: Stir in minced garlic and tomato paste, cooking for 30 seconds until fragrant. Add smoked paprika and cumin, stirring constantly to coat evenly.
  • Step 3: Pour in chicken broth and bring to a gentle simmer for about 5 minutes until flavors meld and liquid reduces slightly. Season with salt and pepper to taste.
  • Step 4: In a small bowl, whisk together Greek yogurt, lemon juice, fresh dill, minced garlic, and salt until smooth and creamy. Add water if needed to reach desired consistency.
  • Step 5: Prepare base with zucchini noodles or brown rice on a plate. Layer fresh spinach on top, add warm turkey mixture, drizzle with yogurt sauce, top with diced cucumber and lemon squeeze.
