Ingredients
  

  • 1.5 lbs boneless, skinless chicken breast, cubed
  • 2 tablespoons sesame oil
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 2 cups broccoli florets
  • 1 cup snap peas, halved
  • 1 cup shelled edamame
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon red pepper flakes
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • Sea salt and black pepper to taste

Instructions
 

  • Step 1: Prepare all ingredients - cube chicken, slice peppers, mince garlic and ginger, chop green onions.
  • Step 2: Heat sesame oil in large skillet over medium-high heat until shimmering. Add chicken in single layer and don't move for 2 minutes to create golden crust.
  • Step 3: Cook chicken 6-8 minutes total, stirring occasionally, until cooked through and golden. Transfer to clean plate.
  • Step 4: Add garlic and ginger to same pan, stir constantly for 30 seconds until fragrant.
  • Step 5: Add bell peppers, broccoli, and snap peas. Stir-fry 3-4 minutes until tender-crisp.
  • Step 6: Stir in edamame and cook 1 minute more.
  • Step 7: Whisk together soy sauce, rice vinegar, honey, and red pepper flakes in small bowl.
  • Step 8: Return chicken to pan, pour sauce over everything, toss well. Cook 1 minute until sauce clings.
  • Step 9: Remove from heat, stir in green onions. Taste and adjust seasonings.
  • Step 10: Divide into meal-prep containers, cool to room temperature, seal and refrigerate.

Notes

Store in glass containers for up to 4 days in the refrigerator. Keep vegetables tender-crisp to prevent mushiness during storage. Don't skip the searing step on chicken for maximum flavor. Can substitute shrimp, swap edamame for cashews, or serve over rice, quinoa, or lettuce wraps. Glass containers recommended for even reheating and to prevent absorption of sesame oil flavor.
