Ingredients
  

  • 2 lbs lean ground beef (90/10 blend)
  • 8 slices bacon, chopped
  • 1 tablespoon salt
  • 2 teaspoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 5 oz sharp cheddar cheese, shredded
  • 2 cups shredded iceberg lettuce
  • 1 medium red onion, diced
  • 2 large dill pickle spears, chopped
  • 8 cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon ketchup
  • 1 tablespoon apple cider vinegar

Instructions
 

  • Step 1: Cook bacon on a foil-lined baking sheet at 400°F for 12-14 minutes until crispy. Chop onion and pickles while bacon cooks.
  • Step 2: Heat large skillet over medium-high heat. Crumble ground beef directly into pan and cook 7-8 minutes until mostly cooked through, stirring occasionally.
  • Step 3: Add salt, pepper, garlic powder, onion powder, and smoked paprika to beef. Stir and cook 1-2 minutes until fragrant.
  • Step 4: Mix mayo, mustard, ketchup, and apple cider vinegar in a bowl to make sauce.
  • Step 5: Layer lettuce as base in each of 5 meal prep containers. Add seasoned beef, crumbled bacon, cheddar cheese, diced onion, pickles, and tomatoes.
  • Step 6: Drizzle 2 tablespoons sauce into each bowl. Refrigerate immediately.

Notes

Stores in airtight containers for up to 5 days. Keep sauce separate if prepping more than 4 days out to prevent lettuce from getting soggy. Can portion ground beef separately and assemble fresh bowls daily for maximum freshness. For reheating, warm beef portion in microwave 60-90 seconds and add back to fresh lettuce. Add fried egg on top for additional 6g protein. Nutritional breakdown: Protein 35g, Carbs 8g, Fat 38g, Fiber 2g per bowl.
