Ingredients
  

  • 1 cup cottage cheese (full-fat or 2%)
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups fresh or frozen blueberries
  • 2 tablespoons melted butter or coconut oil

Instructions
 

  • Step 1: Preheat oven to 375°F and line a 12-cup muffin tin with paper liners or grease with cooking spray.
  • Step 2: Add cottage cheese, eggs, honey, vanilla, and melted butter to a blender. Blend for about 45 seconds until smooth and mostly lump-free.
  • Step 3: In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
  • Step 4: Pour the blended mixture into the dry ingredients and fold gently with a spatula until just combined. Do not overmix.
  • Step 5: Gently fold blueberries into the batter. If using frozen blueberries, toss lightly in a teaspoon of flour first.
  • Step 6: Divide batter evenly among muffin cups, filling each about three-quarters full.
  • Step 7: Bake for 20 to 24 minutes until tops are golden brown and a toothpick inserted in the center comes out clean or with just a few moist crumbs.
  • Step 8: Let muffins rest in pan for 5 minutes, then turn out onto a cooling rack.

Notes

Room-temperature ingredients blend more smoothly. Cool completely before freezing in a freezer bag for up to three months. Reheat in microwave for 25-30 seconds or thaw overnight in fridge. Use full-fat or 2% cottage cheese, not non-fat. Don't thaw frozen blueberries before adding. These muffins pair well with Greek yogurt, honey, almonds, or coffee for a complete breakfast.
