Ingredients
  

  • For Lemon Herb Garlic: 1/4 cup fresh lemon juice, 3 tablespoons olive oil, 5 cloves garlic minced, 2 teaspoons Dijon mustard, 1 tablespoon fresh rosemary, 1 tablespoon fresh thyme, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  • For Lime Cilantro: 1/4 cup fresh lime juice, 3 tablespoons avocado oil, 4 cloves garlic minced, 1 small jalapeño minced, 1/3 cup fresh cilantro chopped, 1/2 teaspoon cumin, 1/4 teaspoon salt, pinch cayenne
  • For Soy Ginger Sesame: 1/4 cup low-sodium soy sauce, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 3 cloves garlic minced, 1 tablespoon fresh ginger minced, 1 teaspoon Dijon mustard, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  • For Balsamic Fig: 1/4 cup balsamic vinegar, 3 tablespoons olive oil, 3 cloves garlic minced, 1 tablespoon Dijon mustard, 1 tablespoon fig jam, 1 teaspoon fresh thyme, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  • For Greek Oregano Lemon: 1/4 cup fresh lemon juice, 1 tablespoon red wine vinegar, 3 tablespoons olive oil, 4 cloves garlic minced, 2 tablespoons fresh oregano, 1/2 teaspoon salt, 1/4 teaspoon black pepper, pinch red pepper flakes
  • Base protein: 4-5 boneless skinless chicken breasts (6 ounces each)

Instructions
 

  • Step 1: Combine your chosen marinade ingredients in a bowl. Whisk together the acid, oil, and mustard first to create an emulsion.
  • Step 2: Add your aromatics and seasonings. Stir in minced garlic, fresh herbs, and spices. Taste the marinade - it should taste bold and flavorful.
  • Step 3: Place chicken breasts in a gallon-size zip-top bag or shallow container.
  • Step 4: Pour the marinade over the chicken, ensuring every piece is coated. Seal the bag and remove as much air as possible.
  • Step 5: Refrigerate for at least 2 hours or overnight. The longer the marinade sits, the more flavor penetrates the meat. Do not marinate longer than 24 hours.
  • Step 6: Remove from refrigerator 20 minutes before cooking for even cooking.
  • Step 7: Cook using your preferred method: grilling, sheet pan baking, or pan-searing until internal temperature reaches 165°F (about 20-30 minutes depending on method).

Store marinated chicken in the refrigerator for up to 24 hours before cooking. After cooking, refrigerate prepared meals for up to 4 days or freeze for up to 3 months.
