Ingredients
  

  • 2 lbs boneless, skinless chicken breast
  • 4 oz cream cheese, softened
  • 1 cup chicken broth
  • 1.5 cups sharp cheddar cheese, shredded
  • 2 cups mixed low-carb vegetables (zucchini, bell peppers, spinach)
  • 2 cloves garlic, minced
  • 1 tsp dried thyme or Italian seasoning
  • Salt and black pepper to taste
  • 2 tbsp olive oil or butter

Instructions
 

  • Step 1: Heat oil or butter in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and thyme. Sear for 5-6 minutes per side until golden and cooked through (165°F internal temperature). Transfer to cutting board and cut into bite-sized pieces.
  • Step 2: In the same skillet, sauté minced garlic for 30 seconds until fragrant. Add diced vegetables and cook for 3-4 minutes, stirring occasionally, until beginning to soften.
  • Step 3: Reduce heat to low and add softened cream cheese directly to the skillet. Pour in chicken broth slowly while stirring constantly until you have a smooth, creamy sauce.
  • Step 4: Stir in shredded chicken and 1 cup of cheddar cheese. Taste and season with additional salt, pepper, and thyme if needed.
  • Step 5: Pour entire mixture into a 9x13-inch baking dish. Top with remaining 0.5 cup cheddar cheese. Bake at 375°F for 12-15 minutes until cheese is melted and casserole is heated through. Optional: broil for 1-2 minutes for golden top.
  • Step 6: Let casserole rest for 5 minutes before serving.

Notes

Use pre-cooked rotisserie chicken to save 15 minutes. Ensure cream cheese is softened before adding to sauce for smooth melting. Store in airtight container in refrigerator for up to 4 days or freeze individual portions for up to 2 months. Reheats beautifully in microwave for 2-3 minutes.
