Homemade copycat Starbucks egg bites that are easier, cheaper, and more customizable than the store version. These protein-packed bites deliver 17 grams of protein per bite and are perfect for meal prep, freezer-friendly, and taste better than the original.

Ingredients
  

  • 8 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheese (cheddar, gruyere, or preferred)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 slices bacon, cooked and crumbled (optional)
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup fresh spinach, chopped (optional)
  • 1/4 cup diced onion (optional)
  • 1/3 cup diced ham or Canadian bacon (optional)
  • 1/2 cup mushrooms, finely diced (optional)

Instructions
 

  • Step 1: Prep your muffin tin by lining with silicone liners or cooking spray and place it inside a larger roasting pan.
  • Step 2: Cook any raw mix-ins ahead of time (bacon, sautéed onions, or mushrooms) and let them cool.
  • Step 3: Whisk 8 eggs in a bowl until yolks and whites are fully combined, then add heavy cream, salt, pepper, and garlic powder. Whisk until smooth.
  • Step 4: Stir in the cheese and prepared mix-ins until evenly distributed.
  • Step 5: Divide the mixture among muffin cups, filling about three-quarters full.
  • Step 6: Create a water bath by pouring hot water into the roasting pan until it reaches halfway up the sides of the muffin cups.
  • Step 7: Bake in a preheated 325-degree oven for exactly 30 minutes until eggs are just set but slightly jiggly in the center.
  • Step 8: Cool for 5 minutes, then pop out using silicone liners or run a knife around the edges if using cooking spray.

Notes

Refrigerate up to 4 days in an airtight container or freeze up to 2 months. Freeze on a baking sheet first before transferring to freezer bag. Do not overbake or eggs will become rubbery. Centers should still jiggle slightly when shaken at 30 minutes. For extra protein, add 2 tablespoons vanilla protein powder plus 1 tablespoon water to egg mixture.
