Ingredients

Instructions
 

  • Step 1: Cut chicken thighs into uniform two-inch pieces and pat dry. Mix garlic powder, paprika, cumin, salt, and pepper. Coat chicken evenly with seasoning.
  • Step 2: Heat 2 tablespoons olive oil in large skillet over medium-high heat. Sear chicken 4-5 minutes per side in batches until golden. Transfer to plate.
  • Step 3: Add diced bell pepper and zucchini to same pan. Stir for 3-4 minutes until softened.
  • Step 4: Add 1 pound cubed sweet potatoes and 2 cups chicken broth. Bring to simmer, reduce heat to medium. Return chicken to pan, cover, and cook 15-18 minutes until sweet potatoes are tender and chicken reaches 165°F.
  • Step 5: While cooling, whisk together Greek yogurt, lemon juice, garlic cloves, cumin, and salt. Let chicken mixture cool 10 minutes.
  • Step 6: Gently stir yogurt sauce into cooled chicken mixture. Divide into 5 containers, topping each with 1/4 cup warmed black beans.
