Ingredients

  • 2 cups broccoli florets
  • 1 medium zucchini, cut into half-moons
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes
  • 1.5 lbs ground turkey (93/7 lean)
  • 1.5 cups fresh spinach, finely chopped
  • 0.5 cup panko breadcrumbs
  • 1 egg
  • 0.25 cup grated Parmesan
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 24 oz marinara sauce
  • 0.5 teaspoon red pepper flakes (optional)

Instructions
 

  • Sheet Pan Chicken:
  • Step 1: Preheat oven to 400°F and line sheet pan with parchment paper.
  • Step 2: Pat chicken breasts dry and place on one half of pan.
  • Step 3: Whisk olive oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper.
  • Step 4: Pour half marinade over chicken, arrange vegetables around it.
  • Step 5: Drizzle remaining marinade over vegetables and toss to coat.
  • Step 6: Roast 20-22 minutes until chicken reaches 165°F and vegetables are tender.
  • Step 7: Rest 5 minutes before portioning into containers.
  • Turkey Meatballs:
  • Step 1: Combine ground turkey, spinach, panko, egg, Parmesan, garlic, Italian seasoning, salt, and pepper in bowl.
  • Step 2: Mix gently until just combined, about 30 seconds.
  • Step 3: Roll into 15 meatballs, approximately 1.5 inches across.
  • Step 4: Heat skillet over medium-high heat with light olive oil.
  • Step 5: Sear meatballs 2-3 minutes per side until golden.
  • Step 6: Pour marinara sauce into skillet, reduce to medium-low.
  • Step 7: Simmer 15 minutes, then portion into containers with sauce.
