Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1.5 lbs lean ground turkey
  • 1.5 lbs salmon fillets
  • 2 cups uncooked brown rice or quinoa
  • 2 medium sweet potatoes, cubed
  • 1 large broccoli head, cut into florets
  • 2 bell peppers, diced
  • 2 cups frozen peas and carrots blend
  • 3 medium carrots, sliced
  • 4 tablespoons olive oil
  • Salt and black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons balsamic vinegar
  • Fresh lemon juice from 2 lemons

Instructions
 

  • Step 1: Start your grain by measuring 2 cups uncooked rice into a pot with 4 cups water and salt. Bring to boil, reduce heat, simmer 30-40 minutes.
  • Step 2: Wash and prepare vegetables. Cut sweet potatoes into half-inch cubes, slice carrots, chop bell peppers into bite-sized pieces, cut broccoli into florets.
  • Step 3: Roast vegetables on two baking sheets at 425°F. Drizzle with 2 tablespoons olive oil, season with salt, pepper, and spices. Roast 25-30 minutes, stirring halfway, until caramelized.
  • Step 4: Pat chicken dry and season with salt, pepper, garlic powder. Sear in skillet with 1 tablespoon olive oil over medium-high heat for 6-7 minutes per side until 165°F internal temperature. Rest 5 minutes, slice into pieces.
  • Step 5: Brown ground turkey in same skillet, season with oregano, paprika, salt, pepper. Cook 8-10 minutes, breaking into crumbles until no pink remains.
  • Step 6: Pat salmon dry, season with lemon juice, salt, pepper. Roast on parchment-lined sheet at 400°F for 12-15 minutes until flaky. Cool slightly, break into chunks.
  • Step 7: Divide cooked grain evenly into six containers. Top each with different protein and vegetable combinations throughout the week.

Notes

Store in quality glass containers with snap lids. Season aggressively as flavors mellow in fridge. Keep proteins and vegetables separate if possible for fresher storage and texture. Containers freeze beautifully for 2 weeks ahead. Thaw overnight before eating. Vary preparation methods: eat warm from container, make grain bowl remix with Greek yogurt and hot sauce, wrap in lettuce leaves, or convert to salad.
