Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 6 cups mixed greens
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup frozen edamame, thawed
  • 1/2 cup sliced green onions
  • 1/4 cup crispy chow mein noodles
  • 2 tablespoons sesame seeds
  • 3 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1/4 teaspoon red pepper flakes
  • salt and pepper to taste
  • 1 tablespoon neutral oil for cooking

Instructions
 

  • Step 1: Pat chicken breasts dry with paper towels. Season generously with salt and pepper on both sides. Heat 1 tablespoon neutral oil in a large skillet over medium-high heat until it shimmers. Add chicken and cook without touching for 6-7 minutes until golden. Flip and cook another 6-8 minutes until internal temperature reaches 165°F. Transfer to cutting board and rest for 5 minutes before slicing into bite-sized pieces.
  • Step 2: In a small bowl, combine sesame oil, rice vinegar, soy sauce, minced ginger, honey, mustard, and garlic. Whisk until honey dissolves and dressing emulsifies slightly. Taste and adjust seasoning as needed.
  • Step 3: While chicken rests, shred cabbage and carrots using a box grater or food processor. Slice green onions. Thaw edamame if frozen.
  • Step 4: Toast sesame seeds in a dry skillet over medium heat for 2-3 minutes, shaking occasionally, until fragrant and slightly golden.
  • Step 5: Divide mixed greens between four glass containers. Layer shredded cabbage, carrots, and edamame on top. Add sliced chicken breast. Keep dressing in a separate small container.
  • Step 6: Pack sesame seeds and crispy noodles separately. Sprinkle on top of salad just before eating and drizzle with dressing to prevent sogginess.
