Ingredients
  

  • 1.5 pounds salmon fillets
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 3 tablespoons sriracha
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon lime juice
  • 1 clove garlic, minced
  • 2 cups cooked rice, quinoa, or grain of choice
  • 2 cups mixed greens or shredded cabbage
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions
 

  • Step 1: Whisk together mayonnaise, sriracha, honey, rice vinegar, lime juice, and minced garlic in a small bowl until smooth. Adjust heat and sweetness to preference. Let sit 10 minutes.
  • Step 2: Pat salmon fillets dry with paper towel. Combine garlic powder, paprika, salt, and pepper. Brush salmon lightly with olive oil and season both sides generously.
  • Step 3: Preheat air fryer to 400°F for 3 minutes. Arrange salmon skin side down in basket in single layer. Air fry 12-14 minutes until flesh flakes easily and is opaque throughout.
  • Step 4: Divide cooked grain between 4 bowls. Top with greens, cucumber, bell pepper, and avocado. Flake warm salmon and distribute evenly. Drizzle with bang bang sauce. Finish with green onions and sesame seeds.

Notes

Store components separately in individual containers to keep vegetables crisp. Keep sauce in small jar on the side and combine when ready to eat. Stores safely in fridge for up to 4 days. Double the bang bang sauce recipe as it keeps refrigerated for up to 2 weeks and works great on other proteins and vegetables. Can substitute salmon with shrimp (8 minutes cook time), cod, halibut, or sea bass.
