Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 large zucchini, sliced into half-moons
  • 1 red bell pepper, diced
  • 4 ounces mushrooms, sliced
  • 3 tablespoons butter, divided
  • 3 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon mirin or honey
  • 1/2 teaspoon white pepper
  • Salt to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon water

Instructions
 

  • Step 1: Make the yum yum sauce by whisking together mayonnaise, ketchup, rice vinegar, garlic powder, paprika, and cayenne in a small bowl. Add water to reach desired consistency and set aside.
  • Step 2: Pat chicken dry and season with salt and white pepper.
  • Step 3: Add 1.5 tablespoons butter to preheated air fryer basket at 380°F. Add chicken in single layer and cook for 8 minutes, shaking halfway through until golden.
  • Step 4: Remove chicken and add remaining 1.5 tablespoons butter with broccoli, zucchini, bell pepper, mushrooms, and garlic. Cook for 6 minutes at 380°F, shaking halfway through.
  • Step 5: Return chicken to basket, drizzle with soy sauce and mirin, and cook for 2 minutes to meld flavors.
  • Step 6: Transfer to serving platter or portion into meal prep containers. Drizzle generously with yum yum sauce.

Notes

Store in airtight containers in refrigerator for up to 4 days. Keep yum yum sauce on the side when meal prepping to prevent sogginess. Sauce keeps for a full week and tastes better the next day. Serve with jasmine rice, brown rice, or cauliflower rice. Can substitute chicken with turkey breast or pork tenderloin. Use white vinegar or lemon juice if rice vinegar unavailable.
