Ingredients
  

  • 1.5 cups cottage cheese (full-fat or 2%)
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • Optional: salt, vanilla extract, cinnamon, everything bagel seasoning

Instructions
 

  • Step 1: Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Step 2: Combine cottage cheese and eggs in a mixing bowl and stir until mostly combined. Fold in flour until you have a thick, sticky dough.
  • Step 3: Wet your hands and divide dough into four equal portions. Roll each into a ball, then poke your thumb through the center and stretch gently into a bagel shape.
  • Step 4: Place bagels on prepared sheet and bake for 15-18 minutes until golden and firm to the touch.
  • Step 5: Cool for three minutes on the pan, then transfer to a wire rack. Slice and toast when completely cooled.

Notes

Fresh bagels last up to three days in an airtight container. Freeze individually wrapped bagels for up to three weeks and toast straight from frozen. Never reheat in microwave; use a toaster instead. Double or triple the batch and freeze for weekday breakfasts. Stir cottage cheese before measuring for consistent dough texture.
